$10 Tasting Fee
Tasting fee includes:
- Wrist band to sample at the cookoff tents
- 2 Voting tickets (Since this is a benefit, unlimited tickets can be repurchased for $10)
50/50 Raffle – Tickets cost $5 each or 5 for $20. – This is a raffle that will be held at 3:00, after the chili winners are announced. 50% of the pot goes to Patriots of Texas, the other 50% is the winner’s prize.

GENERAL SUMMARY: Booth setup begins at 7AM on Saturday., be prepared to serve to the public no later than NOON lasting until 2:30pm. Cooking must begin no later than 9AM. A team cook meeting is at 7:45am under the pavilion. You must prepare a 16-ounce thermal cup that will be provided to you for our judges to sample and rate for "Judges Choice". These cups must be turned in to the judges no later than NOON. Do not put any garnishes or toppings on your chili that you submit to the judges.
COOK ON SITE All ingredients should be assembled and cooked on site. No rice or pasta. Failure to follow this rule will result in disqualification.
PREPARE (ONE TYPE) minimum 3 Gallons or more of chili. We anticipate 100-300+ attendees that want to sample your chili and may vote for you. They can't vote for you if you run out of samples. We will provide 2 oz sample cups and spoons for your team to serve up your chili to the public. A few large crock pots work well but large cooking pots work even better when you are cooking in volume.
REQUIREMENTS: Bring a table(s), chairs, TENT with tie-downs or sandbags (required), electric cords, electrical tape, and your own QUIET generator (if necessary) napkins, condiments (i.e. cheese, onions, crackers, hot sauce, etc.) if you wish, and signage and decorations for your booth. We provide cups and spoons for tastings. Each team is given a 10 x 10 space. We recommend cooking behind your tent and table set up.
JUDGING: Guests pay a $10.00 entry fee to taste and judge chili entries; participating guests will have a wrist band to qualify to taste and judge your chili. Each registered guest will receive two tickets to vote in the chili competition, dropping a ticket in the jars at each booth will constitute a vote. Additional tickets can be purchased for $10 each. No limit on purchases of tickets.
JUDGING BEGINS AT 12:00 to the public and ends at 2:30PM and your turn in to judges is NOON. All winners announced at 3pm.
EACH TEAM NEEDS TO SUPPLY THEIR OWN:
• Cooking equipment & fuel
• Cooking ingredients including meat, spices, etc.
• Any condiments you think should be served with your chili.
• Trash bags and containers for catching scraps, grease, etc.
• Table and chairs – for cooking and sitting. You generally will have an approximate 10' x 10' cooking and show space if you are only cooking chili for the competition.
• Tent if you want one.
• Sign(s) to identify your team and or team sponsor.
JUDGING CRITERIA
Turn-in time for chili is NOON - we will not accept any food past 12:15. Chili must be placed in the container you picked up during the cooks meeting.
Your chili will be blind judged on the following five criteria:
1. AROMA - Chili should smell appetizing.
2. CONSISTENCY - Chili should be a smooth combination of meat and gravy.
3. COLOR - Chili should look appetizing.
4. TASTE - Chili should taste good.
5. AFTERTASTE - Chili should leave a pleasant taste after swallowing.
Each cup of chili will be scored on its own merits with a whole number from 1 – 10, 10 being the highest.
