A TASTE OF THE COLORADO FRONTIERStep into the rich history and bold flavors of the West at The Fort Restaurant’s exclusive Colterris Colorado Wine Tasting—an evening where fine wine, wild game and frontier traditions come together for a one-of-a-kind culinary experience. We are honored to welcome Scott High, owner of Colterris Winery, as our esteemed host for the night. With deep roots in Colorado winemaking, Scott will guide guests through the terroir-driven flavors of Colterris wines, sharing insights into what makes Colorado’s wine country truly exceptional.
ON THE MENU:
Colterris Wine Selections – A curated tasting of Colorado’s premier wines, expertly paired with each course.
First course: Buffalo meatball with creamy bechamel sauce
Second course: Pickled beet & goat cheese salad (mixed greens with pickled beets, red onion, walnuts, apples and pomegranate. Topped with vinaigrette.)
Third course: Petite frontier beef pot pie (puff pastry with beef & vegetable gravy.)
Fourth course: Grilled elk leg with chimichurri and sweet potato
Dessert: Pioneer’s Trifle Delight (layers of light cake, custard, berries and whip cream)

- When entering, follow the red brick path to the "Eating House" doors. Once inside, please ask the host where the wine dinner will be.
