
About this Event
Cook your way down the coasts of Italy all the way to Sicily in this class led by Chef Craig Logan. Start on the isle of Caprice with its famous insalata caprese, a classic salad of tomato and fresh cow’s milk mozzarella cheese with extra-virgin olive oil, Arcadian lettuce greens and milled black pepper. Cruise to the Amalfi coast for fresh pappardelle pasta with sauteed baby portobello mushrooms, asparagus, roasted peppers, and peas simmered in a light vegetable velouté enriched with chardonnay and roasted garlic. In Sicily (at least spiritually), we’ll prepare a thin-crust flatbread brushed with sweet basil pesto and layered with ripe tomatoes and provolone and mozzarella. For dessert, we’ll make tiramisu, a rich coffee-scented chocolate sponge cake soaked with espresso syrup, layered with whipped mascarpone cheese and Chantilly cream, and accented with dark cocoa.
