Learn the time-honored technique for crafting tri-color pasta from scratch using fresh ingredients. The class will begin with an introduction to the ingredients and an overview of the process. Make a basic pasta dough with egg, flour and salt. Then, make a spinach purée to make green pasta dough and purée cooked tomatoes for red pasta dough. Learn the technique to knead and shape the dough before rolling it out into thin sheets. Cut the dough into an assortment of pasta shapes, then learn how to cook the pasta until perfectly al dente.
