Join us at Marrow West Village for an immersive, hands-on chicken butchery class led by Chef Karen. This intimate experience is designed for home cooks and food lovers looking to deepen their understanding of whole-animal cooking while building practical skills you can use immediately.
You will learn how to break down a whole chicken, gaining insight into proper knife technique, and then learn about three distinct methods for cooking chicken, highlighting how different cuts lend themselves to different preparations.
The class will also explore essential flavor-building techniques, including curing, marinating, and brining, with guidance on when and why to use each method to achieve the best results at home.
Following the class, the group will enjoy a chicken-focused lunch prepared by the Marrow team—an opportunity to enjoy the techniques discussed and continue the conversation around the table.
