Chef Neil Dandekar of Carte Hotel and Chef Stephen Gage of JRDN will team up on Thursday, August 25th, 2022 for a 5 course Chef Collaboration Dinner hosted at Carte Hotel.

Amuse: Kusshi Oyster, "Feast of Solitude" Granita, Osetra Caviar - Paired w/Mikkeller IPA
First course: Bluefin Tuna Crudo, Coconut, Calamansi, Thai Chile, Pandan Oil - Paired w/ Mt. Akina Rice Lager
Second course: Head Cheese Currywurst, Crisp Yukon potato, spiced Tomato Jam - Paired w/ Iskold Classic Vienna Lager
Third Course: Steamed Salt Spring Mussels, chorizo, garlic, tomato, fennel, cream, herb butter, grilled bread - Paired w/ Origin of Culture
Fourth course: Kentucky Fried Duck, cornbread, guajillo-honey butter - Paired w/ Spontan Cherry Fredriksdal
Fifth Course: Budino, chocolate, vanilla custard, banana tuille, hazelnut - Paired with Traeblod

About Chef Neil Dandekar:
A graduate of the California Culinary Academy, Chef Neil’s love for food can be attributed to watching his father cook in their family home. After graduating Chef Neil began working in some of the best restaurants and resorts throughout Los Angeles, Orange, Riverside, and San Diego Counties, including being part of the opening team at The Resort at Pelican Hill and joining the team at The Fairmont Grand Del Mar when moving to San Diego. Known for cooking within the seasons, Chef Neil has tremendous respect for ingredients and how they can be showcased simply and at their truest potential.
About Chef Stephen Gage:
Chef Stephen Gage moved to San Diego in 2009 to attend the San Diego Culinary Institute, where he received a Diplome de Culinare in "World Cuisine." After culinary school, Gage worked at the now-defunct Steakhouse at Azul in La Jolla, before moving on to the iconic La Valencia Hotel where he worked as Sous Chef for La Valencia and Café la Rue before becoming Chef de Cuisine. He then took the Chef de Cuisine role at the short-lived Blush Ice Bar before getting his first Executive Chef position at Underbelly North Park in September 2015. In 2016, Gage went on to take the helm in the kitchen at Blind Lady Alehouse in Normal Heights before leading the kitchen at now-defunct Pacific Standard Coastal Kitchen in July 2017. Gage has been working at JRDN at Tower 23 Hotel in Pacific Beach under previous Executive Chef David Warner since 2019. Warner has been promoted to food & beverage director for Eat.Drink.Sleep, the parent company that owns Tower 23 Hotel.
