Chablis is the northern most segment of France's Burgundy wine region. Known for precise, crisp, and minerally complex white wines, Chablis has little in common with other Chardonnay-based wines. Part of the uniqueness of Chablis are the soil and the climate. The soil is Kimmeridge Clay, with outcrops of the same chalk layer that extends to the White Cliffs of Dover. The climate is cool, which allows for slow ripening - creating fruit with evolved complexity and maintained acidity - features that translate to wines of infinite flavor and great ageability. The other nice feature of Chablis is that their Premier and Grand Cru wines are actually obtainable at reasonable prices!
