Build a Simple, Affordable & Efficient Solar Food Dehydrator for Fruits & Vegetables drying for use at Asawana Farms in Upper Marlboro, MD.
Small urban farmers that grow specialty vegetables & herbs face challenges in preserving these produce. Traditional methods of drying food-using heat directly from the Sun are effective, but present food safety challenges. Direct sun drying have obvious limits to
food safety, scale & economic feasibility.
The purpose of this volunter Community Service project is to design a simple, affordable
& improved dryer for drying vegetables that leverages a small solar panel & solar fans.
An enhanced food dehydrating system that is simple, affordable, easy to operate & maintain.
The dryer should increase food safety, preservation time, rate of production, nutritional value and other beneficial properties, while reducing the time to market, retained moisture content,
The dryer should be able to dehydrate a small set of target foods (vegetables and herbs) that have been determined as most appropriate.
