Hey, let's do bagels for brunch :-D. A Bagel making workshop (the Chicago Marxist-Leninist style, not that flimsy Montreal style, feh) that runs like a May day history + cooking show through out the weekend.
Lead by Noah (who does not claim that the Haymarket events were lead by Marxist-Leninists but did experience Sunday brunches on May Day in a distinctly M-L context in childhood)
For toppings we'll learn how to boil and aerate maple syrup from CPC down to sugar for all manners of concoctions including the sauce for a whole salmon we'll smoke on our own smoker (and for putting in the blondest Yemenite coffee you've ever seen in your life.)
Lead by the ineffable Tera John whose life long relationship with maple and maple sugar applies heat to every step of the process, filling the room with warmth and inspiring contemplation like the whisps of sap vapors filling the air as new stories crystalize in the cast iron skillet of this rich kitchen initiation.
We'll also learn how to make jelly from scratch and churn our own butter for some Nuevo traditional schmear.
lead by the multitudinous Mariah Scott with two more traditional, neat tricks produced from their kitchen witch's cloak to prepare you for foraging season and lean times ahead.
And we'll learn how to turn a whole lot of valuable scraps, juices and leftovers into whole meal bases and healthy supplements you're looking for to stretch the budget and your creativity. It is truly the innovation of necessity that produces most of our traditional culinary experiences.
Becca Alldun is living with this innovation and offering her skills off the farmstead and in the kitchen for this weekend of discovery and purpose.
