Cheeses smoked or aged in ash (Morbier, Fiore Sardo, Rogue Smokey Blue) meet wines grown in volcanic soils (Etna Rosso, Santorini Assyrtiko, Oregon Pinot). Think smoked potato croquettes with Fiore Sardo and charred scallions paired with smoky reds. We'll finish with a cheese course that’s been smoked in-house.
