Welcome + Sourdough Basics
● Quick intro to artisan sourdough and its benefits
● Get to know your starter: look, smell, feed
● Pass around mature starter samples
Mix & Hydrate Dough
● Hands on: mix water, flour and starter
● Learn about hydration and autolyse phase
● Demo: proper hand mixing technique
Stretch & Fold Practice
● Learn how to develop dough strength without kneading
● Hands on: guided folds
● Discuss fermentation timelines and how to ferment at home
Bake & Taste
● Discuss baking tips: steam, temp and crust
● Slice and sample a finished loaf
● Optional: butter, jam and olive oil pairings
