Artisan Bread WorkshopStudents 18 and older welcomed

Students should bring an apron, drink and snacks.
We will break for lunch around 12-1 depending on the progression of class
Please be aware that due to the nature of bread making and the camp's schedule, certain items will need to be prepared before student involvement. Some recipes require up to three days of preparation. The objective of the class is to provide each student with ample hands-on experience, along with clear instruction on the steps completed prior to their participation.
Objectives
-Gain an understanding of bread-making, exploring the science behind it, dispelling myths, and simplifying recipes and techniques.
-Gain knowledge on various fermentation types and the process of creating a sourdough starter.
-Gain insight into ingredients and their impact on different types of bread, including what to incorporate and what to exclude.
-Gain insights into tools that are essential versus those that are primarily for marketing and novelty purposes.

-Learn how to work with a basic beginner friendly recipe
-Learn to use your 5 senses in identifying proper fermentation
-Learn how to create beautiful score designs on the top of a loaf
-Learn how to bake the loaf fully and avoid common beginner errors
-Learn how to use inclusions to create an endless amount of flavor possibilities.

-Learn how to use a simply recipe
-Learn how to flavor your dough
-Learn how to elevate your skills with focaccia art using various vegetables and herbs.
Master the Art of Brioche Preparation
-Learn how to work with a simple yet rich bread dough
-Learn how to shape dough in various traditional forms
-Learn how to use inclusions to create a delicous array of sweet and savory breads.
Master the Art of Croissant Making
-Learn how to create a lean dough for lamination.
-Learn how to form and work with a butter block.
-Learn various ways to properly laminate lean dough.
-Learn how to cut and shape dough into standard croissants.
-Learn how to properly proof and bake.
-Learn how to use visual cues to distinguish good from bad results.
Master the Art of Sourdough Bagels
-Learn how to work with bagel dough
-Learn how to shape and form bagels
-Learn how to properly prep bagels for baking
-Learn various ways to change flavor profiles in bagels
Students will leave with:
-Active Sourdough starter with maintenance instructions
-Sourdough boule (traditional)
-Sourdough boule (wheat blend/1 day recipe)
-Focaccia (Herb and vegies)
-Braided Blueberry Lemon Brioche loaf (can opt for a plain loaf if preferred)
-4 Croissants (2 plain and 2 "pain au chocolate")
-4 Sourdough Bagels
