About this Event
The 2024 annual dinner will focus on the theme of sustainable and ethical diets, including the health and environmental impacts of ultra-processed foods and alternative protein sources. Hear from Dr Kim Anastasiou (University of Adelaide) on the environmental impacts of ultra-processed foods, and Professor Rachel Burton on plant-based protein sources (University of Adelaide). The presentations will be followed by a 5-course dinner at Etica, including antipasto, pasta, pizza, salad, and dessert.
Prof Rachel Burton is an expert in plant molecular biology and plant functional genomics, particularly as it relates to cell wall biosynthesis, re-modeling and degradation and the impact these biological processes have on end use quality of cereals and biomass.
Dr Kim Anastasiou is a Research Fellow at Stretton Health Equity in the Stretton Institute at the University of Adelaide. Her research focuses on understanding and improving the health, equity and environmental impacts of food systems.
