Celebrate National Nutrition Month with an unforgettable Wellness Wednesday Community Dinner at Essensia Restaurant & Bar at The Palms Hotel & Spa.
This special evening features Executive Chef Giovanni Pusceddu in collaboration with Swank Specialty Produce and Ellen Kanner, the Soulful Vegan—an award-winning author, Miami native, and passionate advocate for plant-based living. Known for her vibrant storytelling and approachable, flavor-forward recipes, Ellen brings a unique perspective on how food can nourish, connect, and inspire.
Founded in 1996 and a Slow Food Snail of Approval Farm, Swank Specialty Produce is a family-owned farm in Loxahatchee Groves that has grown from a small lettuce operation into a 20-acre farm cultivating over 350 varieties of specialty produce and wildflowers. Working closely with South Florida’s top chefs, Swank is known for its hyper-fresh, sustainably grown ingredients harvested at peak flavor—often the very same day they are served.
Set within our lush tropical garden, this family-style dining experience invites guests to slow down, connect, and savor a menu inspired by the season’s abundance—featuring vibrant greens, heirloom vegetables, and nutrient-rich ingredients sourced directly from the farm.
