APPETIZER
- Bacon-wrapped dates with tarragon, goat cheese, and Medjool dates wrapped in applewood-smoked bacon.
VIKING PLATES
- Smoked salmon with capers and onions, dill sauce, pickled herring, Scandinavian pâté, creamery butter, pumpernickel bread, country white bread, cucumber salad, and red cabbage.

MAIN COURSES
- Vol-au-vent with fresh asparagus, poultry, and herbed cream demi-glace in puff pastry.
- Oven-roasted Viking-style pork roast with root vegetables, garlic mashed potatoes, red beets, red cabbage, and demi-glace reduction, featuring onions and mushrooms roasted to perfection.
Wine Pairing: Côtes du Rhône red wine - Viking-style oven-roasted duck (bone-in) from Mary’s Farm, with baked apple, celery root mash, garlic mashed potatoes, red cabbage, and Mama’s famous demi-glace reduction.

DESSERT
- Traditional Danish apple cake, layered with stewed apples, herbs, breadcrumbs, and sugars, served with Strauss heavy cream.
- Additional: Coffee with fresh cream and sugar cubes served on a silver tray.
