An Introduction in the Way of Tea | Jurong Lake Gardens

The Song dynasty (960–1279) was the golden age of powdered green tea. The unique method of tea preparation alongside brewing competitions during this period brought tea enjoyment to its pinnacle of refinement. Tea during the Song Dynasty was prepared by whisking. Green tea was ground into a fine powder and hot water was added before the tea master whisked it into a luscious foamy bowl of verdant green goodness. In this two-hour session, participants will savour some of most exquisite Uji green teas that have been in production since the early 1600s:

• Two different grades of Gyokuro tea brewed in three different ways. Gyokuro is a type of shaded green tea that is different from the other Sencha teas. The tea leaves are shielded from the sun for at least 20 days with straw mats before harvest, and yields a sweeter and more umami flavour profile. Gyokuro remains one of the most expensive types of Sencha available.

The method used in Gyokuro cultivation is also used in producing Tencha, (碾茶) which refers to green tea leaves that have not yet been ground into fine powder as Matcha. Records show that this process is already in existence since 1107 when Chinese Emperor SONG Huizong wrote the Treatise on Tea.

• Two different grades of matcha tea prepared using the Song Dynasty technique of tea spotting.
