This summer, acclaimed food writer Khushbu Shah releases her eagerly anticipated debut cookbook, AMRIKAN: 125 Recipes from the Indian American Diaspora (W.W. Norton & Company; on sale June 4, 2024, $35). Reflecting on her Indian-American background, the immigration of Indians to America, and their food-adaptation patterns, AMRIKAN features 125 fun, inventive, and bold recipes reflecting how the Indian diaspora cooks at home.

Khushbu was most recently the restaurant editor at Food & Wine magazine, where she crisscrossed the United States several times over on the hunt for the country’s best new chefs. She is the youngest person and the first person of color ever to hold that title. Her writing has been featured in The New York Times, The Washington Post, GQ, Eater, and the Best American Food Writing anthologies, and she has made appearances on television shows like Ugly Delicious. Khushbu currently resides in Los Angeles and grew up in Michigan, where her immigrant parents raised her with a deep appreciation for spices and good fruit.

In AMRIKAN (UM-ree-kan—it’s America, with a Desi accent) Khushbu utilizes the information gleaned from her upbringing and travels across the U.S. to showcase how the Indian diaspora is cooking today. She adapts ingredients from her global pantry and works them into Indian dishes or turns to her Indian pantry when cooking dishes from around the world, resulting in a cornucopia of easy, flavorful and completely unique dishes that are neither fully Indian nor fully American in their origin. Khushbu further reflects on the Indian diaspora in various essays throughout the book, ranging from Origin Story: Indian Food In America to an essay On Caste And Food and 10 Things You Need To Know About Indian Drinking Culture.
