The story begins in the depths of Tasmania’s rich and fertile soils, where roots intertwine, and seeds wait to emerge. We celebrate the unsung heroes, the pollinators, who bring our fruit and vegetables to life. Our farmers tend the land, braving the seasons and unpredictable elements to bring us nutritious food.
In the hands of our guest chef Cameron Matthews (Mapleton Public House) and Matt Seggie (Diverge), the ingredients transform to reveal the science behind your plate.
The paddock to plate journey is a scientific quest and tonight’s menu is crafted to the journey. Each course, a revelation - a symphony of flavours and discussions from:
