Cambozola: soft-ripened triple cream cheese with light blue vein. Rich, almost spreadable with mild blue cheese tang.
Pairing: Bartenura Moscato d'Asti
The sweetness will balance the light, blue cheese funkiness and the acid will be a counterpoint to the creaminess.
Pecorino Tartufello: Sheep's Milk Cheese studded with black truffle. Earthy with a little tang and a little sweetness on the finish.
