About this Event
As the blade first touches the surface of the Parmigiano-Reggiano wheel, there’s an audible resistance—almost like the cheese is reluctant to part with its ancient secrets. The rind, a weathered armor, gives way slowly to the pressure of the knife, setting the stage for the unveiling of this granular masterpiece.
Once inside, the true magic begins. Cutting Parmigiano is more of a ritual than a task—your knife finds natural fault lines, guided by the cheese’s crystalline structure. Each piece fractures with a satisfying snap, revealing a rugged landscape of pale gold, dotted with tiny white crystals of tyrosine that catch the light. These crunchy bits are not merely aesthetic; they are nature’s promise of intense flavor.
The sensation of cutting Parmigiano isn’t smooth but rather a controlled crumble. The knife pushes through layers of time itself, separating wedges that speak of rich, grassy pastures and long, patient aging. As you break each chunk apart, you’re not just preparing cheese—you’re unveiling a treasure that's been waiting to be discovered, each piece ready to offer its sharp, nutty complexity with the first bite.
