A Royal Feast…6 spots available at R495 - normal price R795 It takes a fair bit to sign up for a class but it also takes a huge amount of courage to host them. I have had this class in mind for years. It started around 2012 when I hosted a show on Saffron TV and The Home Channel. I focused on celebratory dishes and reviving old techniques to bring in fresh ideas turning lunches and dinners into absolute feasts. This isn’t just a class, it is a cooking experience.
The star of the class is the Parda Lamb Breyani with slow cooked smoked lamb, layered with basmati rice and lentils and oven baked after being covered with a layer of dough. Parda means veil so this describes the cooking style. The dough bakes till it forms a golden crust trapping in moisture and turning it into fragrant steam that bursts through once the veil is lifted. A must for breyani lovers….
Shahi Masala Chicken: Chicken on the bone marinated and simmered in my blend of spices with browned onion paste and cashews. This curry is finished with cream and a touch of gold leaf.
Old fashioned prawn curry…flavoured with ajwain in a rich tomato base with hints of tamarind. There are a few secrets to this recipe.
Roti…made from scratch taking you through all the steps to making flop proof roti.
Burfee Soji…two decadent desserts combined into one dessert. The burfee is placed into a mould and turned out before being garnished with cream and roasted almonds.
The highlight of this is the feast that follows the class where we get to share the dishes prepared.
