Live in-depth training to transition to a whole food plant based diet.
About this Event

This is an in-person class that will meet every Tuesday evening from 6:00 to 7:00 pm for 6 weeks.

This 6 week nutrition class is designed to gently transition you and your family to healthier eating patterns. You will learn which foods are helpful for disease prevention and which are harmful (based on science). More importantly, you will learn how to incorporate healing foods into your daily diet and how to prepare them at home. Each week will include cooking demonstrations, recipes, and tastings. At the completion of this class, you will be able to confidently cook healthful meals for your family that treat our chronic diseases, such as diabetes, heart, disease, cancers, and autoimmune disease. This class is science based, so if you are confused about all the conflicting food and nutrition information out there, then please sign up for this because it is the real deal. Make dietary changes at your own pace, but the goal is to be fully transitioned to a whole food plant-based diet within 6 weeks.

Each week will be a different lesson plan from a board certified Plant-Based Physician.

Resources are given to help you succeed and continue to learn even beyond the class.

Week 1 - Unlearn Food Science

Info: We are overfed, but under nourished. Most Americans consume processed foods as 60% of their intake. Learn about addictive food substances, and why it is so hard to stop a standard American diet. Learn which foods to avoid, and how to do it. Bonus content on why you do not want to depend on medications. Set personal goals for the course.

Week 2 - Eat to Nourish

Info: Our country spends more money on healthcare than on food! Explore the shortfall nutrients that most of us are lacking, what is the science behind fiber and why do we need it? Learn about the gut microbiome and dysbiosis. Do we need oils? Discover what to eat to get more healthful fiber into your diet.

Week 3 - Stop Destructive Foods

Info: Cardiovascular disease kills one out of three Americans. A Whole Food plant-based diet has been extensively studied for more than 50 years and is the only treatment proven to reverse disease and extend life. The standard medications and surgeries cannot make this claim. Learn how we have become enticed by "food science" and how you can avoid destructive foods that cause atherosclerotic disease, heart, disease, and strokes.

Week 4 - Add Healing Foods

Info: In America we have an epidemic of chronic disease and our lifespan is decreasing. In this session, we learn about nourishing foods, phytonutrients, and how these healing foods nourish. Learn what to eat daily for best results. We also discuss inflammation and have an introduction to the "Blue Zones" of the world.

Week 5 - Eat Mindfully

Info: This session dives into how we eat and includes information on improving digestion, and how our autonomic nervous system and circadian rhythms regulate our digestion. Includes methods to improve circadian rhythm and control of our autonomic nervous system relating to meals and digestion.

Week 6 - Keeping it going. How to stick to it

Info: By this time, most participants have lowered their cholesterol, blood sugar and weight and are sleeping better and have less pain. During this session, we will talk about becoming part of a community so that you have the support to continue long-term and not fall back into past destructive food habits. Tricks and tips for long-term sustainability included.
